Using this recipe: Halibut Fillets with Bombay Tomato Sauce but replaced Halibut with Mahi Mahi. I also made Sweet and Spicy Shrimp sensa the skewers. Served alongside Parmesan Pasta off camera. Once again, I urge you to try this - it was out freakin standing. Thanks Jamie!

Unfortunately, no plated photos. Just imagine a piece of fish, some sauce, shrimp and pasta devoured by my crew. I've NEVER had a bad recipe from Jamie!

Mahi Mahi looks delicious Dwain. Love the sweet and spicy shrimp too. I've done that recipe a couple of times too! Very nice.

Dwain - excellent cook dude. I don't grill enough fish and I intend to remedy that soon. I actually have a good friend who lives in H'ville. When he lived down here, he taught me to grill redfish and tuna. I need to recall that grill-fu and throw down some fish real soon - you have inspired me...

Regards,

John

If I lived in Slidell, seafood would be on my grill way more than beef, pork or chicken. I love fresh seafood, but in the middle of the country it is either frozen or outrageously expensive and the choices are limited to the usual suspects. I suppose I would wear out on it after a while, but I would sure love to have the chance to find out how much seafood is too much.

Dwain-That looks really good. I'll have to look up the recipe.Thanks.

John! I can't believe what you said! When I lived there, we ate seafood at least 3 times a month. More when crabs & crawfish were in season.
