Old Timers Bacon.

I ground 24lb of butts yesterday, used 12lb for this
12lbs was perfect for two 13 x 9 pans. I used wax paper to line the bottom and a sheet on top compacted with a wood cutting board.
It's gonna sit in the fridge overnite, and tomorrow I'll slice it.. Smells amazing ( I used Sugar Maple)

Okay, after a few hrs in the fridge I sliced off an end piece and fried it.
It smelled like bacon and tasted like it, but more like a bacon jerky texture.
I'm happy with it. I had 13 butts in the freezer and used three on this and some other grinds.
 
Sounds and looks really good. Would this be something similar to scrapple?

Edit: nope, scrapple appears to have a bunch of additives. Yours sounds and looks much, much better.
 
Man Tim, I am so excited to see how that slices and to hear your report. Looks super cool and super good to this point. I got some sugar maple last year, after a few cooks, I just stopped liking it, the only thing I still really liked it on and use it for is bacon. I can't put my finger on the reason?
 
All sliced and vac'd.
Cut some logs I can cut into chunks or sticks for beans, greens, vegs or a bloody Mary.

If you and I lived close, I would totally be knocking on your door today to try some of that. What does it remind you of most? Turkey Bacon texture? Sausage? Scrapple? I am with Bruno and TFL, I am so damn intrigued!
 
It has the mouthfeel of a coarse ground sausage but tastes like bacon. Sorta texture like from a jerky gun, but more moist.
I was surprised I could hold the loaf with one hand, I thought it would break or crumble but every slice held it's shape.

It's been about 40 years since I tried scrapple from your neck of the woods.
I forgot how that tasted. Someone mentioned spam, but I haven't eaten that in quite awhile. :)
 
Good looking bacon like strips, Tim!
Reminds me of the Johnsonville sausage strips I tried, but bet it tastes better.

Yea, LOL. With 13 butts and a meat grinder I was looking for something different to occupy my time.:)
The mix is a Ground & Formed Bacon Seasoning I bought from Owens ( Our Vortex Guy )
It comes with a maple cure, and with a coating of maple syrup, and the sugar maple smokewood, it left a nice maple flavor.
I'm defiantly doing this again.
