Sunday's spare rib cook.

Coal setup, with hickory.

Used my Duke's mixture of rubs.
Rolled to start, until the coals were burned around to allow them to lie flat.

Pretty much done after 4.5 hours, running from 225 to 250 at the hood.

Bob, yes, please spare me...once maybe twice. The plate looks pretty good, potato running a close heat with those ribs :) as always Mr Correll, great pics and even better looking cook. Thanks for sharing!
 
Classic Bob's perfect cook. The ribs are cooked to perfection. I have try next time that the snake. And what about your potato salad? Any more info?
