Sunday's spare rib cook.
Coal setup, with hickory.
Used my Duke's mixture of rubs.
Rolled to start, until the coals were burned around to allow them to lie flat.
Pretty much done after 4.5 hours, running from 225 to 250 at the hood.
A piece of the flap meat for sampling.
Bandana's Sweet & Smoky for the sauce.
Plated with some Costco corn, and made by me potato salad.
Good eats!
