slow smoked a hunka beef short ribs over red oak wood...

while that was happenin', sliced up two Idaho russets ala Hasselback with skin

tossed those on with 'bout three hours to go...

rotated the "ribs" to drain the fat...

removed the ribs after 4½ to 5 hours... could have gone longer, another 2 hours, probably.

whipped up a "sauce" for the spuds, should not have.... wasn't too good & hassels are fine without anything...
after dinner & dishes, I removed myself to an outdoor fire...

Those are some big ol' beef ribs there, Jim! Great looking cook. I like the way you ended the evening with a fine drink and a fire. Don't get much better than that. Enjoy the rest of your weekend.
