You can probably get chuck eyes if you have a decent butcher. Ask them to cut steaks from the chuck primal (roll) at the rib end. Make sure they charge you the chuck price.

I took a web tutorial into the guys and they got it from that point on.

The strip and Vegas just go together, so a good marketing plan by the beef industry!

Perfect! It took forever to get affordable or any chuck eyes here and until that happened I just had to look at all the great cooks of chuck eyes on the forum.
Now I get to wait again, oh well by the time they show up here I will have seen every possible way to make them, Ill just have to pick my favorite one.
