Every few weeks I try to make this as it is Nancy’s, my wife, favorite. The recipe is from Weber and actually pretty simple.

Here we go. Chops and gus on the Performer. The chops have been brined and seasoned. The Asparagus has been basted with a Tarragon butter sauce.

Meanwhile the OTG has Yukons, sliced and spiced with EVOO, Rosemary, salt & pepper.

Plated. The chops have a reduced Balsamic Vinegar glaze, (check out the recipe link). The asparagus was smothered with the Tarragon butter sauce. The potatoes were dipped in the Mayo, Dijon, Chives, Parsley sauce.

I absolutely love that brine recipe. My version of it is just the brined chops, I believe it's called Rosemary Brined Pork Chops. I usually smoke them a little indirect and then sear to finish. Anyway, I've never seen the version with that glaze, but they're really pretty!
