Naked Baking Powder Roti Wings

I wanted crispy wings, so I decided to try the BP thing.
50/50 mix of baking powder & K-salt sprinkled on, placed on a rack, then in fridge uncovered for 7 hours.

Setup for the roti on the OTG.

After 7 in the fridge I used a damp paper towel to wipe off the bp & salt, then dusted with Penzey's (no salt) Adobo seasoning.
Then back in the fridge for another 2 hours.
Ready to Rack and Roll!

Following Mr Sample's new healthier drink policy, his is rum and orange juice, mine is bourbon and cranberry juice instead of ginger ale.

After 30 mins. over Stubb's charcoal, and peach wood smoke.

Let 'em roll for another 15 minutes.

Dine time.
Ranch dressing on the planks, my own cayenne pepper mix on the corn, and special wing dip for the naked wings.

The most crisp wings I've ever turned out on a grill, no off tastes from the baking powder.
Jo Anne dipped hers in warmed bbq sauce and gave a 2 saucy thumbs up review.
My made-up mayo dipping sauce was great, with back end heat.

The sauce, if interested.
1/2 cup mayo
1/8 cup spicy brown mustard
1/8 cup bbq sauce
1 TBS Frank's Hot sauce
1/2 teaspoon cayenne powder
1/4 teaspoon black pepper

I suggest sprinkling in the spices a little at a time and sampling along the way.
 
Wow, that's a great looking wing!

As for the drink, you're better off with a diet ginger ale over the cranberry, check the sugar/calories on that cranberry!

yeah, that's good stuff.

My kid doesn't like hot sauce so we order wings plain with sauce on the side. It turns out I'll order them this way even when she isn't around as the wings stay crispy through the whole meal and you can dip away to your heart's content

I for one like this technique and appreciate your post and details. I have used the BP method for whole chickens even turkeys. Really liked how it aided crisped skin.

I'll definitely be trying this with wings now. I think this would work with any one of a number of dry rubs. Would be nice to have a good adobo rub recipe. Will have to look on the recipes forum else out on the net. Have dried adobo, probably just experiment. A dry citrus based rub should work well, heck even Chinese 5 spice.

Sparked a lot of ideas. Thanks for the post!
 
Great looking wings! Have you tried them in your WSM with the water bowl completely removed? And if so, how does the crispiness compare?

I haven't tried them on a WSM yet, but Jim Lampe has been doing chicken the no bowl way recently.
