My wonderful wife is always very honest with her opinion of my cooking, but also doesn't want to hurt my feelings.
Her ratings are:
"It was okay" (barely fit for the dog)
"It was good" (it was edible, and tasted okay)
"It was really good" (it was really pretty darn good)
"Excellent" (excellent)
So I was thrilled with her excellent rating of Sunday's spare ribs!
Cut in half and rubbed with a 50/50 mix of Weber's Classic BBQ, and Penzey's Northwoods.
Hickory for smoke:
Watching our dogwood tree turn red:
On with some Normal Potatoes (no fancy smancy cuttings)
Half slab with with Bandana's Sweet & Smoky for my wife, and the other half, plus tips, with Blues Hog sauce for son and I:
Kicked back on the deck to have one more adult beverage and unwind from such a labor intensive cook (plus I'd been nibbling on some tips
)
Found mostly small ribbies & tips left for my plate, but they know I love the tips:
I cooked these at 275/300 for about 3 hrs., indirect on the kettle.
Decided to foil after 2 hrs. cook time (seldom do this).
My apple juice was frozen, so I added a bit of Coca Cola, and uncovered after 40 mins.
They tasted pretty darn good to me too, and got an 'Awesome" from our son.
