My dad liked tongue, but that gene skipped me.
 
No wood...I wanted to get a taste of what was going to happen... But next time I'm thinking oak or mesquite.

I used water and when I foiled at 160 I added a little apple juice. Get the familia over and I promise they will love it.
 
How did you know when it was done? Was it probe tender or temp specific? Or did you just try to peel the membrane?

According to my wife its done when the skin peels away easy. The temp that I reached was 212.

When my wife makes it in the house it would boil for 3-4 hours but she would check after 3 hour mark and 15 minutes after that until the skin comes off easy.
 
Tony, once again you prove that you are the king of excellent tacos! I love lengua a lot of people are put off by it but i;m sure it's cause they haven't had it.
 
If I were ever going to eat tongue it would be yours....wait that didn't come out right. No joke. I'd eat that even though I never have.
 
We have had beef tongue in the past, but it was cooked on the stovetop and then sliced. Cold tongue can be excellent, too.

Smoking it sounds real interesting. May have to give that a try...
