My very first Smoke Day – lots of fun and an overall success according to the family and friends. Hope you enjoy:
Starting with spares and a small amount of flap meat for beans. Used a modification of Lilly's rub.

Pernil was on the money 4 hours later:

The plate with yellow rice and beans (cooked under the ribs in the WSM). Standard grilled corn on the cob did not make the cut for the main plate.
