MTQ Brined Pork Loin

Had a little piece of loin, decided to use Morton's Tender Quick for a brine.
First things first, put on my bbq cap.

6 hrs. in the brine, rinsed, dried, and hit with Penzey's salt free AZ Dreaming.

Lump and some partly burned TJ's for fire, pecan and hickory for smoke.

A cool rainy day had turned nice, time to play with my new 13mm ultra wide angle lens.

Looks good, Bob! I've never used the Tender Quick but with results like that I might have to give it a try; I'm sure a box would last me a long time!

Looks like a nice day to be smokin Bob, and the pork looks nice and juicy. With that brine did you find it too salty or with the rinse was it good to go? I have had mixed results with MTQ from way to salty to not salty at all - but my rinse stays the same so I dunno.. Maybe its the Alberta elevation ;) hehe ..

Jeremy, I gave it a pretty good rinse, and it wasn't salty at all.
But I used a salt free seasoning just in case.

I guessed at the mix, but about 1 TBS. MTQ to about 3 cups of water.

Need to get a tri i guess. One question,can you ever get a good pic in halfdark without the flash on freehand? Tryed a few yesterday and all blurry. 2/sec pics. No way i can hold 100% still during that time.

Well my friend, you're going to have to get out of auto mode.:)
Try going to aperture priority, use your fastest lens at its lowest f stop, and then bump up the ISO to at least 1600 or more.

Here's the stats on Brooke's inside at night, no flash pic.
ISO: 12800
Exposure: 1/45 sec
Aperture: 2.8
Focal Length: 40mm
 
Humm i guess your right. We landed on the moon?(or did we :P ) Why cant they make a camera that does that for ya?! Ok i need to start working out of the Lazy mode. But between you and me a tripod must help right?
 
DW, you have a Canon right?

A tripod will work on still objects, but you might need to use the self-timer to keep it steady.
