Had a little piece of loin, decided to use Morton's Tender Quick for a brine.
First things first, put on my bbq cap.
6 hrs. in the brine, rinsed, dried, and hit with Penzey's salt free AZ Dreaming.
Lump and some partly burned TJ's for fire, pecan and hickory for smoke.
A cool rainy day had turned nice, time to play with my new 13mm ultra wide angle lens.
And to shoot bird videos with the ultra telephoto setup.
130 internal, time to sear.
Plated for consumption.
Juicy and flavorful!
You can see where the meat was starting to cure by the pink ring.
Full belly, time for some TV.
