More Beef Ribs

Finally found some meaty beef ribs. Never did them before, so I figured I'd give them a shot after seeing other posts. A light rub and sat in the fridge over night. Smoked at ~240 for almost 7 hours with pecan and apple mix. Pretty good. Even got a hard fought compliment from Mrs G.

I do beef back ribs as often as I can (like once a week).
In fact, I smoked two huge racks Today...
I like mine at 225-250'F for four hours or so, today's were done after 4 and a half hours.
I marinate them over night in Stubb's Beef Marinade. Also used Pecan and apple or cherry or hickory... all is good. No other seasonings or flavours added.
Love steak on a stick!
And yours looks FANTASTIC!

I see this is the Beef Rib Club. I hope to join that elite group very soon. Oh, and Dave -- nice work.
Jim, do you recommend a rub, or just a marinade?

I know you do. Remember, I asked you about that? I would have needed a hacksaw to cut the ribs at 4.5 hours. I got a good early start, so as it turned out, there was plenty of time for the ribs and some additional brew.
 
Hi Dave - Nice looking cook. Your ribs look nice and moist with a nice smoke ring. My last Beef rib cook came out pretty dry. Not sure where it all went wrong but I was disappointed. Jim Lampe also puts out some darn good looking rib cooks. Thanks for sharing. Bob

Thanks - Gary </div></BLOCKQUOTE>Gary, for years I've tried all sorts of rubs and marinades, even a simple salt and pepper coat (which isn't too bad on beef ribs). But I've settled on Stubb's Beef Marinade. I like the flavour and what it does when it penetrates the meat. Never a dry rib.
I do marinate them over night though...

On Monday,it was a beautiful day here in Wisconsin(40°)I tried my first attempt at Beef Ribs.I forgot how to post,but I'll give it a try.

I rubbed one rack and salt and peppered the other.The beef flavor was great, they were very greasy.Did them for 6hrs 45mins at 230°. I would have these about once every 6 months. Just to give my arterys a chance to clean out.
