More Beef Back Ribs

Another Glorious Sunday in southeastern Wisconsin with more snow expected later tonight and into tomorrow morning and ... well, whatever.
So.
I decided to smoke up a couple of racks of beefy beef ribs. This is a shot of the top rack after only 15 minutes. They're pretty big slugs of meat and I expect them to cook for 4 to 4.5 hours and I'm gonna try to get the temps down to 225-240'F.
No winds or snow (now) to worry about so I'll grab a cold High Life and watch some Big Ten Basketball.

...after an hour and thirty minutes, I took a couple of photos. Here's a shot of them on the lower rack. I did get the dome temp down to a steady 225'F, my preferred temp for these beefs.
Another two and a half hours to go...

Your absolutely right,great day for BBQ. Those beef ribs sure look good.I'm doing 2 racks of babyback ribs.I forgot how to post pictures!I'll look in my notes.Temps outside 34º.Ribs should be ready by 5:00pm I'm hungry!!Hopefully snow will hold off.

Hey Chuck, I just heard the latest on the snow fall for tonight and tomorrow...
Less than 1/2" north of Racine County Highway K and 15" to 22" south of K.

Looks like I'll be using a broom and you'll be up to your kettle in snow

My large intestine just flipped over looking at those Beef Ribs.Please stop sending pic's until I get done with supper.

Were the ribs done within your estimated time range of 4-4.5 hours? I've never done them, but found some good ones to smoke next weekend and thought they took more time.
 
Jim, the beef ribs look killer! Do you barbecue every weekend? But I've got to try beef ribs sometime soon... Thanks for the inspiration.

Dave, the ribs did take over 4 hours, I took them off after 4.5 hrs... I've done these beef ribs many times and find 4 and a half at 225-240'F works pretty well and consistant. Yes Jeff, the snow is on it's way... and Tom, Superior? that's in Minnesota there hey, huh?
...and Gary, yes, I barbecue or grill every weekend, thank you.... and grill at least twice during the week.
 
Looks great Jim. I was at Restaurant depot Saturday and picked up a 15# package of beef ribs. Looking forward to trying them.

And thanks for the tip on Three Cellars. Neat place. Picked up some of that smoked beer to take up to Fire On Ice this weekend. Love that German one. Smells like a campfire.

A guy that <STRIKE>works</STRIKE> is employed where I am, shops the Rest.Depot also... he never told me about beef ribs there.
umm..., YEAH! The German beer I tend to like better than the Left Hand smoke brew... what is "Fire On Ice"?
 
Fire on Ice is a BBQ competition held Mille Lacs Lake Minnesota. The only competition in the world held on ice. Not KCBS due to most teams don't stay overnight on the ice. But we cook chicken, ribs, pork loin and this year tri-tip (that was my main reason for the RD trip - picked up 35 #'s of tri-tip).
