Mojo Pork Chops and my first Mexican Rice

Made a truly wonderful meal tonight as far as my family and I are concerned. Trying to make my friends Tony and Maribel proud. I made my version of Maribels great rice dishes.
I came to find out there is a great Mexican Grocery Store about twenty minutes away and I hit it up yesterday. Love it. They had some beautiful Pork loin Chops cut about 1/4" thick. Put them in some Mojo Criollo for the whole day. Good stuff.

Made a sauce for the Chops when done out of fresh pineapple I chopped up real fine, some Curry, clove spice, honey and some white wine. A little Sriracha for heat. I reduced this down quite a bit

Sauce reducing, red onions and some diced garlic and fresh cilantro ready on the board. Some EVOO in the saute pan. Onions on first, then some long grain rice on browning.
Garlic added, then some Cummin Kosher and fresh ground.

Some cilantro, and a can of Ro-Tel diced tomatoes and green chiles and three cups of chicken broth

Chops on the OTG with lump indirect for awhile and a good brew for the 11 degree cook

Another winner Bill! Also like your taste in beer there Buddy. At least I heard it was pretty good. Closest to me is Ohio, too far of a road trip.
 
Bill that rice looks great and I would love to try it. I got everything except how much rice you used, if you wouldn't mind sharing that information I would appreciate it.
 
Rich I used two cups rice but I wanted some for left overs this week. Started with 2.5 cups chicken broth but that was not enough, ended up with 3 and added some water towards the end to keep it from drying out.
If it was just me, the CEO and #2 home I would use one cup rice.
