Merry Christmas from the Hollow

Woke up to this site Christmas morning. A beautiful snow, only the 5th time this has happened here in Colo in 30 yrs or so. It was really special. Not been getting much snow the last few winters here.

The wife got this rib roast all seasoned up and ready to put Mr. Perfect my Performer. We are going to spin these bones round & round.

Onto the rotiss it went it went with rockwood lump & a little hickory wood smoke.

Here is me & my old man checking the temps on the bone roast. It's about ready.

Here we are plated up, sit down if you like we have a plenty.
The roast had great flavor, a tad over done but everyone says I'm too critical of my own cooking. I wanted to pull at 135 with bone attached, but after all the good wine & bs'ing it got to 144. Still nice & pink in the center. We are still adjusting to the new cooking level up here. All in all it was a great Christmas meal.

I agree, everything looks great: family, cooking outside, nice place, nice view and grilling toys....are the streets paved of gold, too?

That's really great a white Christmas! What a beautiful place you have there and that roast looks perfect. Have a wonderful New Year you two!
 
Looks great Russ. What a beautiful set up you have to grill. Really like that last shot with your dog. Know that roast was great too!
