With just over 2 weeks left until I go back to work, I've been doing most of the cooking around here. Tonight, I decided I wanted to make meatloaf! And, being the way I am, I did it on the kettle! I kinda made up the recipe as I went along. 80/20 ground beef, chopped onion, minced garlic, 1 egg, Italian style bread crumbs, SBR instead of ketchup, a dash or two of Worcestershire sauce, and the last of some BBQ rub I had in the cupboard. Mixed and formed into a loaf on some parchment for easy removal.

Then on the kettle, indirect for about an hour.

It was a little wet, so it fell apart when I took it off. But very good! It had a great flavor!

And, the rare plated pic! Served with mashed purple taters and foiled green beans. Very yummy!

And the best part? Leftovers for lunch tomorrow!! Sweet deal!!
