Meatloaf On The Kettle

With just over 2 weeks left until I go back to work, I've been doing most of the cooking around here. Tonight, I decided I wanted to make meatloaf! And, being the way I am, I did it on the kettle! I kinda made up the recipe as I went along. 80/20 ground beef, chopped onion, minced garlic, 1 egg, Italian style bread crumbs, SBR instead of ketchup, a dash or two of Worcestershire sauce, and the last of some BBQ rub I had in the cupboard. Mixed and formed into a loaf on some parchment for easy removal.

Then on the kettle, indirect for about an hour.

It was a little wet, so it fell apart when I took it off. But very good! It had a great flavor!

And, the rare plated pic! Served with mashed purple taters and foiled green beans. Very yummy!

And the best part? Leftovers for lunch tomorrow!! Sweet deal!!

Looks GOOD! Personally, I prefer a wet meatloaf over a dense brick of burger. I'm glad you mentioned that was purple mashed taters. It sure looked like an awful lot of poi. :)

That wasn't Lee & Perrin's Worcestershire by any chance? LOL!

I see it was indirect cooking, but how did the parchment paper hold up?

Reading your signature reminded me to mention I brewed a SNPA yesterday (and another last weekend).

Bill, oh heck yes it was!! :D
And the parchment did fine for the hour it took. It was just off the smaller end of the pile of lit, so it did ok.
 
Living with the meatloaf queen I get a lot of different kinds of meatloaf and yours looks really good.
 
Phil I know some of those made up recipes on the fly turn out amazing. I hope you wrote it down! We've done stuff and then later couldn't remember how we made it! Beautiful meatloaf. Its making me hungry and I already ate!
 
Robert, Pammi and I have been married 16+ years. While I do most of the cooking on the weekends, this is only the third time I've made her meatloaf! They've all been good, but all have had different flavor profiles. Keeps it interesting. Yeah, that's it! :p
 
Awesome meatloaf and taters. Try smoking it next time, that will take it up another notch in flavor.
