Meat Probe - Upper or Lower Grate

I am planning to smoke two 7-8lb pork butts on my WSM 14 this weekend which will require me to use both the upper and lower grate. I have a thermoworks smoke which only includes one meat probe. So my question is which piece of meat should I start with the probe in to know when it time to wrap the first one before switching it over to the other and then again when it's finished. Upper or lower?
