What maximum temp. should I expect on my WSM when using the water pan?
Good luck and welcome! If this is something you are already thinking about, then please disregard. However, make sure to keep an eye on the water pan and make sure it does not go dry especially if you want to go higher heats. Higher heats will will burn off the water faster and then with no water and that charcoal ripping you can go from wanting to run a little hotter with water to a heat spike that can take some of the fun out of the cook. Keep us posted!Thank you! I just purchased a Thermoworks Billows. Wish me luck with this 15# beauty!
