It depends on the type and amount of fuel and amount of water in the pan.What maximum temp. should I expect on my WSM when using the water pan?
I'm going to use Jealous Devil lump. 22.5" WSM with water pan 1/2 filled.It depends on the type and amount of fuel and amount of water in the pan.

Good luck and welcome! If this is something you are already thinking about, then please disregard. However, make sure to keep an eye on the water pan and make sure it does not go dry especially if you want to go higher heats. Higher heats will will burn off the water faster and then with no water and that charcoal ripping you can go from wanting to run a little hotter with water to a heat spike that can take some of the fun out of the cook. Thanks Brock! The brisket has been on the smoker since 11:30pm. As of 6:45am, I'm hitting 168ºF. Will wrap soon.Welcome Steve, and good luck with the Cook if you have not begun already. If you have, I hope it turned out well.

Congratulations!All done! 10.5 hour cook right around 270-275º for the most part. Wrapped last 4 hours. Off to the cooler for a long nap before serving.
