Marinated Skirt Steak With Garlic And Cilantro

This is another recipe out of Adam Perry Lang's Serious BBQ. The guy does some excellent stuff. This one is grilled Skirt Steak. Sided it up with baked sweet potatoes and grilled corn. The corn is also a recipe from Serious BBQ. The Cilantro Pesto in this recipe caught my eye. Here we go.

Skirt Steak hasn't been the easiest thing to find around here, but finally found this guy a couple of days ago. Just under 3 pounds.



The recipe calls for a killer Marinade, starting with a cup of fresh orange juice and half cup of lime juice.





The rest of the stuff.



After grating the garlic, mixed everything up in the food processer and placed the skirt steaks in plastic bags along with the marinade for 3 hours.



While we're on the steaks, this is the rub that was applied before grilling.



Got the corn prepped. I mentioned the Cilantro Pesto. It consists of cilantro, lime juice, grated garlic, k salt and pepper, EVOO and Canola oil. Blended.



Baked some bread to round out the afternoon.



Later on, after the meat was finished marinating, got things rolling. Got a couple of sweet potatoes on.



Corn on after a good soak.

Followed in a few minutes with the meat. Two minutes a side.







The recipe calls for a Resting Butter. It consists of a stick of unsalted butter melted and combined with chopped cilantro, lemon juice, Worcestershire Sauce, grated garlic and hot red pepper flakes. After the meat has been on 2 minutes a side, it is removed from the grill and placed in the Resting butter and dredged with the mixture. The steaks are then returned to the grill for another 2 minutes, longer if you like it more well done.



Meat is done.



Sliced.



Bread too.



Plated.



This meal came out fantastic. I'm really enjoying the recipes in Mr. Lang's book. The meat was bursting with wonderful flavors. The cilantro pesto on the corn was delicious also. Hope you all have a great week as we get closer to the 4th. Thank you for looking.

Man Cliff you really got it going on! That is a killer meal. It looks absolutely wonderful. Your pics are top notch too. I have a long way to go...

Resting butter? New concept to me, but I'm in!
 
Cliff, Rich and I are both taking notes and will be trying it soon. That looks fantastic and with a nice glass of wine HEAVEN.:)
