A ham, pork loin and a pancetta. The ham I sliced in half because I wouldn't fit in slicer. I added yellow mustard and brown sugar on the cut side. the pork loin was seasoned with Lawry's Seasoning salt, black pepper and dehydrated garlic. The pancetta I just left as is. There was a paper coating on the outside of it when I opened it and removed it and decided to tie it just in case.

Everything on the grill. cooked between 275-350*F with some apple chunks for smoke.

Two hours later the pork loin was at 150 *F. Also took the ham off of the grill

Around 45 minutes later the pancetta hit 150 too. I didn't know what to do with this, I bought it on a whim and decided to throw it on the grill too. I will slice it tomorrow and see how it turned out.

I cut the ends off the ham and kept a few big chunks of ham and will save them for soups and whatnot and sliced the rest.

That ham is totally transformed - at first glance on my phone I thought you smoked it with the wrapper on.

Can't wait to see what you do with the pancetta. I've been staring at a recipe for a while debating making some instead of bacon.
