Howdy folks..the BBQ bug bit me last week and got the itch for some good ole que...so found me a nice 9lb flat and went to work..Saturday I made up a injection of beef bullion, apple cider vinegar, worst sauce and some siracha and let it soak all day..got up early Sunday and fired up the smoker..no water and pecan smoke..rubbed the brisket with a simple salt/pepper and garlic...

My best BBQ buddy got up with me as well..she made it about an hour and snuck in and hit the couch!

Ran the WSM about 285 the whole time..

About 4 hours in..

Since I was already up..made some tortila and eggs on the grill with sausage links!!

Brisket went for about 6 hours..wrapped it for 2 and pulled it and it sat wrapped in a warm cooker for about 2 hours..oh ya I made some beans too!

Didn't get any sliced pics..we had a mess of folks over..beans, slaw, beer brats, taters...all kinds of good stuff!

Actually this was one of my best briskets to date..awesome flavor..tenderness was perfect...almost no smoke ring(oh well can't eat that anyway) all round good stuff!
