last night, started with a 4lb bird, had a few limes with aged skin, can't use them in cocktails...
mixed equal parts of Stubb's Chile-Lime rub with a citrus rub
stuffed the bird with one pared lime then seasoned it inside and out
on the spit spinnin' a few times
that's a little apple wood in the pit
after half-way thru the cook, the rain came down in buckets
so, nothing better to do but to hang out in PV snappin' photos ;D
once the chicken reached a safe temp inside, it was brought inside & served with a BP and squash
not the prettiest slug of shé~cone, butt it was daggumrootin'tootin' good!
gonna have more tonight with some pasta
