Hello All,
On Friday I was perusing Google Play Newsstand and came across this recipe at Splendid Table. I decided to adapt it for the grill. Results were mixed but I think it has promise so I am going to tweak it and try again later.

Marinade - Lemon Juice, Honey, EVOO, Garlic, & Cumin

Bird Marinated in Honey Lemon Mixture and Grilled direct for 5 Min before Moving Indirect

Pepper & Garlic Medley (Serrano, Jalapeno, Banana, & Bell) Drizzled with EVOO & Kosher Salt

Bird Glazed with Thickened Marinade

The family enjoyed the meal but everyone agreed that it still needs work. The color was awesome but the taste not nearly as bold as I expected. The recipe did not call for salt and I didn't use any. It definitely needs some. I only had time for about one hour of marinating (life keeps interfering with my BBQ time). Next time I will marinate for at least three hours. I think the marinade could benefit from more honey as well (I used the lower amount specified in the recipe range). I will be doing this one again soon. I will let you know how it turns out.
