Leftover smoked chicken noodle soup

Had some leftover chicken from my don't be this guy post. It was a bit over smoked, so the CEO decided to make soup in hopes of mellowing out the smokiness some. It worked and needless to say, came out pretty decent. Just an idea if anyone ever oversmokes some chix.

That looks like the perfect comfort food for any cold evening! Love the lazy soup-eating position, complete with Star Wars pajama pants!! After you ate that, you probably didn't move for quite while, correct? :)

I made some chicken and rice soup from a leftover smoke-roasted chicken I had cooked recently. After grilling a whole chicken on my OTS with apple wood for smoke, and after we ate a good part of the meat, I saved the carcass in the fridge to make stock the next day. I submerged the carcass along with aromatics and made quite a bit of smoked chicken stock, and once it was done, I pulled all the solids out of the liquid, but I just couldn't see throwing out all that extra meat. So, I stood in the kitchen and meticulously separated each and every leftover fiber of meat. After that was done, I looked at the pile and suddenly got hungry for chicken soup. This was late afternoon and my wife agreed that sounded like a winner for dinner that evening, and so I used some of the stock and the leftover meat, some rice, and other veggies, and suddenly, we had some of the most flavorful chicken rice soup I've ever eaten! And, it was so simple, I'll most likely be doing this entire process again next weekend!

Wow! That's a lot if work. Sounds damn good too! The CEO just cut up some leftovers. Lol
 
That looks perfect John, that is something my CEO would do with my leftovers and drive me crazy with the smells in the house for hours.
