Latin pork roast with mojo.

Cooked up a Latin flavored pork butt today. I got the recipe from Webers Way to Grill cookbook. I marinated the 6 lb. roast in garlic, oregano, vinegar, evoo, and salt.

After 4 hours at 260.

For sides I made Tony's rice and beans.

10 hours later the pork hit 190 and was tender.

The wife and I loved the pork and sides but the mojo sauce was the kicker. I think I'm going to do Cuban sandwiches with the leftovers.
 
That looks awesome. Can you post the recipe please?

Paste: 5 cloves of garlic grated, 3T virgin olive oil, 3T cider vinegar, 2T dried oregano,1T+2t kosher salt, 1T pepper. Combine ingredients and marinate a 6lb butt overnight or longer.

Mojo Sauce: Zest of 1 orange, 1C OJ, 1/2C grapefruit juice, 1/3C chopped white onion, 2T vinegar, 1 serrano chili minced, 1 garlic clove minced, 1t sugar and salt to taste. Combine and spoon over cooked pork. Add cilantro as a garnish.
