Last Night's Cowboy Grillin'

two bone-in cowboy rib-eye steaks

one Idaho halved cut side on shavings of frozen carnita flavoured lard in a cast iron skillet

blossom-cut sweet onions in small cast iron servers with the same lard atop
then tossed the taters & the onions in an oven at 400ºF for an hour

meanwhile, seasoned the beef steaks with the same stuff i use on tri tips

fired up the 26" OTG with cowboy lump...

got some 'shrooms in butter on the kettle...

...and finishing up here, the steaks are cooked.

and plated with the onions, taters and some Chilé red wine no cowboy'd ever touch :p

I would eat that 7 days a week! Well done! Spring there yet? Looking forward to the yard pics buddy! You can keep the squitos though!

Excellent looking dinner Jim!!! But buying carnitas flavored lard is cheating, you need to make it yourself!!
