Lamb Ribs

I'll admit to being a little obsessed with lamb ribs after first trying some at Jack Stack in KC this past winter. My first shot at some racks of my own, came last weekend when we took a little road trip to Cleveland and found some at the West side market. The bill for the two came in under $9 which is considerably cheaper than most of my experiments.

I kept them simple rubbing them with some olive oil, salt and pepper

they spent a little over an hour in cherry wood smoke, ramping up to 300*

I finished them without the water pan to get a little direct heat on them

I was kind of pressed for time and another 30-60 min probably would have got them to a more ideal tenderness, but we didn't mind them as is. Now, it's back to dreaming until my next random chance for more...

Nice experiment man. My family loves lamb - we usually go for a medium rare roast but this looks very interesting. I have never seen lamb ribs around here but I'd love to give them a try. How was the flavor?

they were pretty delicious, but I like the flavor of lamb. I wouldn't say the flavor was any stronger or less than a loin chop.

I'll see if I can get the photo up of the rack at the place in KC, it was nearly pig sized and I enjoyed every bit of it
 
Wow, those are great photos of some fine looking lamb ribs! I've never tried lamb ribs before, but now I really want to get my hands on some after seeing these pictures.
 
Lamb ribs, once you have had them will keep you dreaming of more for sure.

My wife, who was a bit reluctant to make the purchase, hasn't stopped talking about them, so I think I got the green light to do them again!
 
Ribs look great! j, try cooking them without the water pan from start to finish, you will never use the water pan again.
