So, picked up some nice Aussie Lamb Rib Chops on sale today, decided to create a nice little meal for me and the CEO

Mint Jelly, EVOO, Dijon, Fresh Ground, and granulated garlic along with some ground up dry rosemary in a pasty sauce. Just shooting from the hip here, who knows, sounds good

On the OTG indirect for awhile until 110 IT, then on for a quick sear to 135, Yukons done and Garlic Bread made from a Portuguese Roll toasting

Shooting from the hip, huh? Bill, I would wager I could tie a hand behind your back, both your legs together, slap an eye patch on ya; and you would still whip up a four star meal. Something that looks like this ^^^
 
Beautiful. I often grill racks from SAMs indirect and slice into chops.

Try adding a hunk of cherry wood. I find it adds a great flavor.
 
What Brian said! You guys are going to have to quit adding things to my To-Cook list! There aren't enough meals in the day or hours for the bike/treadmill. Also, it's a close call whether I'd rather have that lamb or the Thermapen with those flames - serious Pitmaster bling.
 
Usually I don't care for mint jelly on my lamb (bad childhood memories of very dry overcooked leg of lamb with mint jelly), but if it comes from the Schultz kitchen, I'm all in!
