Lamb Fillets & Scallops.

Mrs T.UK wanted lamb for dinner this evening, so I pressed SJ into service.

1. Getting fired up.

2. Lamb fillets doing nicely. (Homemade marinade, for 3 hrs).

3. Because I can, I did a skewer of fresh scallops. (Landed today at 05:30 this morning).

4. The finished article. Bulgar wheat tabouleh salad. Whole wheat wraps. (Pull up a chair, and dig in folks).

Great stuff. I never connected skewers and scallops duh. We have tons of scallops here in FL. I'll be doing that real soon :).

Barb D. I went to school in Scottsdale many, many years ago, and visited Prescott numerous times. You also put up some great grub! Cool website!
Jose S. Be careful when cooking scallops. They can taste wonderful or feel like chewing on a squash ball!! I have found that marinading them in olive oil, cayenne, fresh ground thyme to be the best, 5 mins on either side….done!! Soft, but a bit al dente. (But that's my preference). NEVER use lemon juice in the marinade. Because it will only "cook" the scallops prematurely, like cerviche. Add yer lemon juice when serving.
 
Looks good. It's amazing what can come off a SJ. Where is that charcoal grate from?
Tyson. The charcoal grate came with the SJ. The bars are close together & stop any lump falling through. I wish they did the same style grate for the 22" kettle.

Great looking meal Tony. I have never tried to grill scallops before - now I'm going to have to try it...
