Labor Day smoked turkey

Ok... first photo contribution to the site! Sorry, I intended to take better photos with my real camera, but it started raining just as my smoke ended, and hungry kids were not being patient. That's also why the platter pic is a bit light on meat.

This was a 12 pounder - freebie from BJs last Thanksgiving time. No special prep - I put parsley, sage, and rosemary in my water pan and smoked with hickory chunks and wine barrel oak chips.

And yes, I realize the turkey is upside down. I found that smoking them upside down keeps the fatty juices continually basting the breast meat and makes for a very moist turkey.

Also whipped up a bit of BBQ sauce from this recipe. It was a good meal!

Nice color on the bird. That reminds me I have to do a practice rib for thanksgiving this year. :)

Awesome looking turkey Derek and great first post! That also is nice to know
information on cooking that bird. I have always cooked them breast up. Will
have to try this method soon.
