Killer Chops, Grilled2Perfection

yesterday, an old friend came by for dinner, i cooked a few racks of baby backs.

halfway thru, i tossed on some shrimpies to go with our beverages.

I have no other photos to share, since we got carried away in conversation about this and that and that too.

Today, while the master slept,...

...i got tonight's dinner started by seasoning two quite large pork chops with a citrus rub that tastes pretty good.

carved up two quite large baking potatoes then skewered'em

after a while, the chops went on...

apple wood was tossed in for smoke flavour...

the taters certainly grabbed a bit of that smoke...

only a few patty pans were found in the garden and they were sautéed with a small onion or two...
dinner was plated very much like this.

a little spicy mayo/creme was poured over the sliced russets...

These chops may have been the best I have ever grilled...
they were marinated in WICKERS for nearly 13 hours... Great Stuff! I NEVER run out of it.
Butt, the chops were tender, juicy, and most flavourful!
Could the citrus seasoning have something to do with these AWESOME tasting chops???

Wow Jim! Super chops and spuds! And I know how the carried away goes! All my cook photos go down a level one drink at a time!
 
That plate is one for the wall! Looks PERFECT! Really nice looking chops your meat supplier have. Citrus on Pork..Why not. Will try that in a near future.
 
Nice, verra nice there! Love the chops. I've been doing them as "hammy" chops lately, but yours look wunnerful. What's the mayo/creme recipe if you are willing to share it? I'm going to be smoking bacon this evening or tomorrow depending on the incoming typhoon report. I may have to skewer up a couple taters too!
 
Have to say it Jim, your cooks look outPORKstanding as always, but...

Those are some great looking chops and taters!! Never thought of going with a citrus profile with pork.....but I am now!!

Kim, Maddie likes to look out the window to watch who will be pulling in the driveway, then she goes bonkers.
yesterday, must have been a slow day.
Steve, the mayo is just mayo and hot sauce and a touch of white (ranch? bleu cheese??) salad dressing all mixed up.
 
If that was a cook for an old Friend, Would you do about half that for your new Friend? ;D Super cook Jim!
 
I think Maddie must me part cat...you need a tree for her on all your window...to funny! You got to love the dog!
 
Looks fantastic, as always. I've been doing sous vide chops several times this summer, and I think I can both grill and take pictures at the same time soon. I will try to give you some competition, but I'm afraid it be hopeless. I'll give it a shot!
 
Beautiful cooks Jim. I hope you see this and feel like typing some more details on how you made those potatoes along with the time/temperature.
