Kielbasa Stuffed Pork Loin

This is my variation of Guinness Beer Brat stuffed Pork loin roast that was posted on Facebook
by Left Hand Smoke. I believe this is TVWBB member Brian Moriarity’s Competition BBQ Team.
I didn’t have any bratwurst, but did have kielbasa in the refrigerator. So decided to use this instead.
After inserting the kielbasa I seasoned the loin with Lawry’s seasoned salt and some homemade
rib rub. The loin was then packaged and put in the refrigerator until today.



Out of the refrigerator and given a bath of garlic pepper.


Put onto the Performer, using RO lump and 1 chunk of maple wood.


When the loin hit 130 internal I basted it with a 50/50 mixture of Blues Hog Original and Blues
Hog Tennessee Red.


The loin is at 140 internal and is done! Put under a tent of foil to rest until the rest of dinner is ready.

Plated with fried potatoes with mushrooms and fresh green beans.


Very moist, tender and super delicious loin! That is what I really love about this board. So many
talented cooks with different ideas that you can work with and try to emulate.

WOW MIKE! And you my friend are one those here that I like to emulate! Was it hard to cut the loin to fit the kielbasa? You look like you're a surgeon :) I'd probably have mine look like Frankenstein! :) thanks for sharing Mike, I'm adding this one to my recipe folder.
