Been a while since I've posted a meal, but I've been grilling. Mostly run of the mill stuff, so I didn't want to bore you. :)

KFFT = Kettle Fried Fish Taco. I was hoping to do this for the fish throw down, but just ran out of time.

Wild caught cod filets on sale? I'm in!

Here's the coating: Panko, S&P, cumin, chili powder and cayenne.

I cut the cod into bite sized pieces and gave them a light coat of canola oil before breading them. Here they are all skewered up:

Then, it was onto the grill using what I now officially call the Correll Cradle:

After the first minute or two, I threw on some peppers right outta the garden:

Made a sauce from mayo, lime juice, cilantro, S&P, red wine vinegar, a pinch of sugar, and cumin. Then plated it all up on some corn tortillas with cilantro and red cabbage.

I've wanted to try making Kettle Fried Fish, now I know it can be done, was worried it would get over-cooked before getting crispy.

To answer your question on my post, without bumping it,
the Michelob Cider is pretty good, a bit sweet, but a dash of cinnamon bourbon makes it right!
 
Beautiful Jim. I nearly picked some of those sweet peppers, but since the veggies in our garden are finally coming in, I'm under strict orders not to buy any produce until autumn. ;)

That's a fantastic plated pic! Kettle fried fish just proves that the sky is the limit. I'm waiting for the day I see kettle fried ice cream.

Bob: it certainly wasn't the crispest fish I've had, but the breading does add nice texture.
