The quest for perfect kettle ribs continues. I'm getting closer, these were real good, but not perfect.

Broke out the 1977 daisy wheel again, this is a rib cookin' son-of-a-gun

And on they go

And the numerous mop stops

And then the home made BBQ sauce

Looks great Chuck! Yes all is well now here in Northern CA :). Amazing how much better a cold bottle of beer tastes after a Giants win ;) Welcome back Hunter Pence!!

If those aren't perfect you've got to be really close. What is it you're not happy with. I'm doing the same thing and following Jim Lampe's method for HH kettle ribs, I've been pretty happy with them, although I don't do ribs very often.

That looks pretty close to perfect to me Chuck. Great color on those. What temp did you run at? Smoke wood?

Regards,

John

Chuck O;
Nice job on the ribs! It's been a while since i've done ribs on a kettle but they will surely get the job, done!

Keep on smokin',

Those ribs look super good to me. Can't imagine what more you desire?
These ones were a challenge because there was a ton of meat on one end and skinny on meat as ribs usually are. I knew they were gonna be tough to nail, I was very close. I was pleased, I've been trying to make good ribs on the kettle, and finally feel pretty good about them

I was a tad hotter than I would have liked, I would guess I was 275, maybe more. You could not put your hand on the lid, only for but a moment. I used the Kingsford Apple Wood charcoal. I love that charcoal, it gives off just the right amount of smoke. I also like the Hickory Wood charcoal, and I almost did a mix of both, but because I love the Apple Wood for ribs, it got the nod for the job

One of these days I'll try the JL's HH kettle ribs. He sure does make fantastic ribs, but then everything he touches on the BBQ is fantastic
