Kempster Chicken, Braised Potatoes and Acorn Squash with Candied Pecans

A few nights ago I took out some chicken thighs and made some Kempster Chicken. This is one of my favorite chicken recipes, if not my favorite. A long time ago, when I bought my first Weber Kettle, it came with a little hard bound recipe book. I still have it and do a lot of Weber recipes out of that book, including this one. I was browsing through the TVWBB Recipe Thread and Bob's recipe for Braised Red Potatoes caught my eye and I did those along with some Acorn Squash with Candied Pecans. This was also a Weber recipe, at least the pecans were. I substituted Acorn over Butternut as it was all I had. Here's some pic's.

The chicken is dipped in melted butter and then rolled in a mixture of seasoned stuffing, crushed, and grated parmesan cheese and some parsley. The pieces are placed in a roasting dish for the grill.



Got the chicken on over indirect heat for one hour, twenty minutes.



Halved the acorn squash. Brushed with melted butter, cinnamon, salt and cayenne. On grill, indirect, for about an hour.



Candied the pecan halves in the oven using brown sugar, cinnamon, salt and cloves. Toasted for about 20 minutes.



Coarsely chopped the pecans after toasted.



Got the potatoes going in the braising liquid, boiled out the liquid and gave the potatoes a nice toast. Sorry for this picture. I'd left my camera on the table outside in the cold. When I brought it in the lens fogged and took several minutes to clear.

Well, that's it. The chicken and sides were fantastic. Thanks Bob, for posting that recipe. Incidentally, Bob's recipe called for small red potatoes. The store didn't have any to my liking so I substituted the small brown potatoes. Thanks for looking.

I think it's time you opened a restaurant up there, put it near The Fly Shop, that's my favorite goto place there
 
There's a whole lotta Weber (+ 1 Bob) love here - great post Cliff! Reservation for two? Two weeks from today?

Excellent looking meal. Some real comfort food right there. I'll have to try that chicken recipe.
 
Man you are on a roll Cliff! Another great cook! The stuffing is just a stove top type dressing?

Hey Tim... I think I used Mrs. Cubbison's Seasoned Stuffing. Any of the seasoned ones probably would work. Just pick one that sounds good to you. Pepperidge makes a good one too. The finer you crush them the better adhesion you'll have to the chicken pieces.
 
Well I see the wizard of Redding is at it again, creating mouth watering dishes for the common folk to dream of! Got to tell yea Cliff I'm stealing the whole thing, yep all of it!
