A few nights ago I took out some chicken thighs and made some Kempster Chicken. This is one of my favorite chicken recipes, if not my favorite. A long time ago, when I bought my first Weber Kettle, it came with a little hard bound recipe book. I still have it and do a lot of Weber recipes out of that book, including this one. I was browsing through the TVWBB Recipe Thread and Bob's recipe for Braised Red Potatoes caught my eye and I did those along with some Acorn Squash with Candied Pecans. This was also a Weber recipe, at least the pecans were. I substituted Acorn over Butternut as it was all I had. Here's some pic's.
The chicken is dipped in melted butter and then rolled in a mixture of seasoned stuffing, crushed, and grated parmesan cheese and some parsley. The pieces are placed in a roasting dish for the grill.

Got the chicken on over indirect heat for one hour, twenty minutes.

Halved the acorn squash. Brushed with melted butter, cinnamon, salt and cayenne. On grill, indirect, for about an hour.

Candied the pecan halves in the oven using brown sugar, cinnamon, salt and cloves. Toasted for about 20 minutes.

Coarsely chopped the pecans after toasted.

Got the potatoes going in the braising liquid, boiled out the liquid and gave the potatoes a nice toast. Sorry for this picture. I'd left my camera on the table outside in the cold. When I brought it in the lens fogged and took several minutes to clear.

Chicken is done.

Cooling briefly.

Squash done.

Potatoes done also.
