Haven't did one in a couple weeks. Wanted to do a standard pie, but still shopping for a new stone,. So, did another deep dish.

Great looking deep dish pizza!

I recently purchased this pizza stone from Amazon:

I am in the process of running tests on this stone and believe it will solve my pizza stone problems for the coming "pizza storm";).

I have an infrared thermometer with a laser pointer so I can instantly read the stone temperature. On my Performer, I had about 1/2 a chimney of used coals spread evenly over the charcoal grate and I dumped a full chimney of lit spread evenly on top of the unlit coals. In just a few minutes I was reading 600-640 degrees over the top of the stone (covered, then opened to check). The first time I ran it, I did not have enough coals under the stone and it didn't get up to heat (I was trying a "donut" placement of coals). At any rate, I threw a few pieces of kindling on top of my coals to darken my stone with wood smoke. Previous tests with another stone had shown me that dark stones work better (I believe the nearly white color of a new stone reflects the heat instead of absorbing it like we expect).

At any rate, this very large stone is going to work really well for me. I also appreciate the reasonable price for a stone of this size (16.5"x 3/4" thick) and quality.

I will be making some thin crust pizza in the next few days and will report further, however, I don't believe a feller or gal can do better than this stone for the kettle.
