July 3rd Overnight Brisket

This was my 4th brisket and each one gets a little better. This was a 12lb prime from Costo smoked around 250 overnight until I wrapped at 175. It was probe tender around 200 and I rested for 3 hours. The point was great, flat was a tad dry. Overall super fun and great cook.

WSM18 ran overnight so steady at 260 accoding to my gauge.
