Jamaican Jerked Baby Backs

Nothing special: just wanted to see if I could remember how to post photos!

Been a long time since I bothered with Baby Backs but they were on sale and looked fairly meaty.
After twenty-four hours with the Jerk Marinade I wiped off the excess and applied a bit of a dry jerk rub...

Used a little Apple Wood and sequential foil packs of Allspice Berries for smoke...

After about four hours and they were ready to come off and meet up with a bit of glaze.

Rather then back on the smoker they took a quick trip under the broiler to set up.

Plated: Jerked Baby Backs with a Mango, Peach & Honey Glaze with Jamaican Pigion Beans & Rice and an Island Cole Slaw.
