My Costco (Redwood City) finally has prime packer briskets! Up until now, all they have ever had is fully trimmed flats. So, I took one of the biggest in the case with a nice thick flat. Unfortunately, since I've been under the weather, I won't get to cook it up for a bit....probably high heat so it doesn't take forever!

In the meantime, cooked up a couple of loaves of my standard sourdough. Did the seam side up/no scoring thing from Tartine on these.....kind of like the random bloom.

Hopefully I'll have some brisket pics to share soon!

Rich, 2lbs a week is a pretty aggressive weight loss goal to get from your doc! I'm trying to make some smart changes (increase portions of "good stuff", decrease portions of "bad stuff") so that I can get to something that is sustainable for me long term. Ya gotta live while you are livin'!
