Today for dinner I did another of my silly experiments. It was a warm day today and a nice evening to be outside grilling.

Maribel brought home a pork loin to be cook for tonight's dinner. I injected with apple juice and webers Cajun seasoning and a little cumin. Then rubbed a little oil.

Then applied Red Eye Rub

Prepared my usual potatoe pack. Seasoned with webers Chicago steak

Today I used lump charcoal for this cook. Also had 2 chunks of peach wood. Indirect grilling until it hit 130

Here's a cool video from Instagram of me searing the loin.

Potatoe packet done.

Let it rest for 10 min then sliced

Plated and ready to eat.

This little experiment resulted in the pork loin being very juicy and moist.

Thanks for looking
Tony and Maribel

No. I will sleep for a few hours and then wake up early around 4am. I know how my smoker behaves when I leave it a certain way.

It's weird in the morning is very cold and in the afternoon it's mid 70s.

Nice looking pork loin you always do great cooks. Happy BD to your daughter also. Sure miss the So Cal weather but not the traffic for sure. Here ten cars at a traffic light is a major backup:)

Tony, you killing us with those warm temps. Must be nice. Not fair when the rest of us are freezing our tails off. Your BBQ looks superb as always. Happy Birthday to your daughter. Have fun & hope those cowboys smack the pack today.

Hey, I would trade your 59 degrees at cooking time for our snow and 28 degrees yesterday.
The plates look excellent!
