Inaugural Jumbo Joe Cooks

Been a long time since I have posted...I've been checking out the site regularly and am always so very impressed with everyone's contributions. Sorry for not acknowledgling those contributions with responses more often....work and soccer for our boys have just been keeping me too busy lately. Soooooo....like many, I picked up a Target sale JJ a few weeks back - finally breaking him in this past Sunday.

Meatloaf - this'll be for the freezer - just a variation of mom's recipe. 80/20, KS, P, Cumin, W sauce, Frank's Red Hot, egg, bread crumbs and a lil' bbq sauce. Bacon on top...tomato sauce coming later.

No Smokey, you will not be relegated to the chimney starter role...I promise.

KBB with some hickory. Keeping it simple.

On indirect for about an hour...or 2 beers. However long that was...

Tomato Sauce added and she's done in 5-10 minutes. I sampled and it really was terrific...

Next up was Sunday evening dinner - thick cut pork chops. Two with KS, P, Cumin and Adobo. Two with Tony Chachere's Creole and a little KS and P.

Action shot

Plated with PF Chang's pork fried rice (leftover), hot mustard and a Mike's. Chops were really good - loved Tony's creole.

Thanks for looking - hope everyone is doing well and enjoying a wonderful Autumn. Good luck to your football or baseball teams!!!

Great to hear from you Jim! I can't believe it, but it does seem as if we all have lives, too. :) Inaugural cooks look fantastic.

Looks good Jim! I missed a SJJ at target myself came back when the warden passed out the pecos, nada, adios. Good to see you back!

Jim...chops look fantastic!
