Imitation Tony's Enchiladas - (no grill)

I saw Tony's enchiladas yesterday & decided to try them instead of what I was planning...... no regrets!

I cheated though - I didn't roti a bird, I just picked up a warm one near the checkstand.....

6-7 oz cheese, 1/4 onion through the mini processor (should've minced by hand)

Some of the lower end but good Mexican restaurants around here have an avocado sauce I really like - I found something that sounded like theirs in a new cookbook and tried it:


Avocado Sauce
MAKES 2 ½ CUPS Be sure to use very ripe avocados when making this sauce. 2 avocados, halved, pitted, and chopped coarse ½ cup sour cream ¼ cup water 3 tablespoons lime juice (2 limes) 2 tablespoons minced fresh cilantro Salt and pepper Mash all ingredients together in bowl with potato masher (or fork) until smooth. Season with salt and pepper to taste. Serve.

I made a few mods - I used lemon instead of lime, I halved the recipe, and I added a little cumin & green habanero hot sauce... Just right!
 
Chuck (and Mary!) I'd set you up with a third, and even a beer :)

I got some of the techniques from the ATC veg cookbook (I made black bean enchiladas and an easy tomatillo/verde sauce).

Something as simple as hamburger or carne asada would be good, I even considered using mole sauce instead of enchilada sauce on these... I'll probably try that one of these days.

....Nate just got the last plate - somebody else better bring something to the table :)
 
Those look really good , man. But you didn't use a snow shovel on the cheese like Tony did.
(Just kidding Tony , I loved those things.) ;)
 
I had to come back to this thread, it's a LOT better than the ballgame I'm watching, LOL
 
Great looking enchiladas Clint, those are so good. Barb and I just did a whole bird and made three big trays of them and into the freezer they went (now down to two). Like some of the ideas to change them up a bit too.
I'll just pretend you used a grill:rolleyes:
 
I guess I missed this thread yesterday.. Awesome looking enchiladas, Clint! Another chicken is already on my grocery list, because we've been itching to make these too!
