Well I had no thighs but ran across some cutlets in the freezer. The rest is well, let’s just say sorta close. Nah. Hey it was chicken right? I used chicken cutlets with a rub consisting of olive oil, chili powder, onion powder, oregano, kosher salt and cumin. Sorry no mustard.
Like Bill I added fried diced prosciutto and pepper jack cheese for the filling.
Not even close to being tidy or neat, I ended up tying these guys up and them using my kabob skewers to make them behave.
Buddy is just making sure we aren’t disturbed by any squirrels.
Per the master, Mr. Schultz, indirect until they reached 150F then over direct to sear them.

Plated. Nancy loved it, I didn’t. I’ll make it again but the next time, less cumin. Thank you Mr.Schultz for planting the seeds.
