Dear Board,

I rarely contribute to this board other than to post pictures of my food. I have learned a lot and I enjoy visiting but I'm not the guy who offers suggestions based on the many mistakes I have made.

Having said that, tonight I decided to thaw out the elk tenderloin steaks that my wife Theresa's friend gave to us last Fall and see what I could do with them?

I marinated the steaks in Lawry's Steak & Chop marinade for a couple of hours. I diced a tomato, some Vidalia onion, garlic, red and green peppers and some mushrooms up and put them in a bowl. I added some olive oil and balsamic vinegar along with some salt and pepper and basil and oregano. I mixed that up and wrapped it in foil.

Once the little grill was going I grilled the foiled veggie mix for 10 minutes before I dropped the steaks on the grill. They were thick steaks and I didn't want to over cook them.

I didn't, they turned out medium rare and the veggie mix on top made it all the more better.

I don't hunt. I've shot and eaten squirrels and rabbits, but big game is out of my realm. I might have to start hunting based on how tonight's dinner turned out! ;)

In the meantime if anyone has any elk or venison they aren't using I'm accepting donations. :)

Only thing wrong with that plate is that someone spilled a bunch of crap all over the meat:cool:!!

Dear Dave,

I have a good friend from my school days who is a successful Doctor. Whenever I used to post a picture of my plated food he always criticized me for the lack of veggies.

I've taken his criticism to heart and won't post a picture of just meat, even though I eat meat raw.

Nice combination of sides to go along with Elk. Barb and I are also working on getting more veggies in our diet. With that said I'm curing 9 1/2 pounds of bacon to go with the veggies.:)
 
That is one awesome plate of food Tim. I like the veggie on top and yes we are trying to eat more veggies.
