How do restaurants serve warm prime ribs and still keep it medium rare?

I found this really interesting and had never heard of an Alto Shaam oven.
 
The local tavern has at least one Alto Shaam, and uses the daylights out of them. The kitchen folks just refer to them as the Altos.
 
Seems like the Alto is an oven plus a Cambro. Franklin Barbecue uses Cambros set to 140° to hold their cooked meats.
