I can take the chillies to be honest, yes it was VERY hot but not something I can't handle.
The problem with it being so hat was it was overtaking the flavour of the meat, which is kind of the point of the cook.

Although, as I said, scrape off the wet bark and it was fine. There was still a decent kick from the rub penetrating the meat but that just made it even tastier.
Think I would 1/4 the amount put in next time. So 2-3 teaspoons, rather than TWO tablespoons! :o
 
James, all I can say is WOW!!! that looks fantastic you did awesome. Going to be some great eats for sure.
