Honey-Vinegar & BBQ Sauce Thighs

Boneless, skinless chicken thighs spread out between two char-baskets.
Used a mix of several different rubs.

Planned to let them cook indirect for awhile, but thunderstorms were getting near, so I started cooking direct, and flipping often.

Some brushed with a honey, cider vinegar mix, the others with KCMP.

CI skillet spuds were cooked on the grill, but due to the weather situation the zukes, 'shrooms, and onions were made inside.

Everything tasted great, but I need to work on the honey-vinegar glaze.
I saw a recipe calling for 6 TBS. honey to 2 teaspoons vinegar.
I'm thinking maybe add an additional 2 or 3 teaspoons vinegar, and maybe a tablespoon of soy sauce.

Wish some of this rain would fall out west where it's badly needed.
 
You never fail to impress, even on a cook like this. Everything looks scrumptious, as always!

I've learned over the years that if "the taste is good, but something is missing", the answer is usually more acid. Lemon, vinegar..

Awesome food and photos Bob! I wish I could send some of this rain out west too!
Everyday the past few weeks, thunderstorm and rain, then sun, the repeat! ;)
 
Nice work Bob!! Love your chicken and sides...sounds like what you need to work on is a roof over your cookers!!
