Mike Coffman
TVWBB Olympian
A 4 pound pork loin marinated in Mojo Criollo for about 4 hours and seasoned with Montreal Steak
seasoning.
The Performer was set up using KBB and 1 chunk of maple wood. The pork loin was put onto the
hickory plank. I soaked the plank for about 5 hours.
Pork loin is done at 145 internal temperature. Cooked at a temp of 350 for 1 ½ hours.
Sliced
Plated with mashed potatoes, gravy and fresh green beans which were slow cooked in the
crockpot for 8 hours.
Loin was very juicy, tender and delicious! But to me, the green beans stole the show as they were
sure flavorful and tasty! This was my wife’s recipe that she developed. For anyone interested,
here is the recipe:
Fresh Green Beans
1 medium onion, diced
Bacon, as much as you want
1 packet of Goya Ham Flavored Concentrate
3 cups of water
Cook on low setting in crockpot until your desired tenderness.
